When it comes to recipes related to rice, Pulao is known to be a primary choice for many Indian cuisine lovers. This article is a recipe of vegetable rice which is rich in aromatic flavors and served perfectly with desserts and Raita.
Every day, having roti sabji can be boring, isn’t it? No matter how many different types of gravy you prepare, but if you are having rotis on daily basis, it can really kill your mood. That’s where you need some recipes related to rice.
Speaking of rice, sometimes plain rice with lentils can be boring too. But how about you transfer the vegetable gravy in the rice itself? Yes, you guessed it right: Vegetable Pulao! When you prepare vegetable rice, it can really save lot of your time from dough making and chapatti preparation. All you have to do is prepare the delicious masala rice and you are done.
Let’s have a look at the ingredients first:
- Oil
- Cumin seeds
- Whole red chili dry
- Green chillies cut into pieces
- Carrot cut into small pieces
- Potatoes cut into small pieces
- Tomatoes finely chopped
- Peas
- Basmati rice
- Spices: Salt, red chili powder, turmeric powder, coriander powder
- Fresh coriander leaves
- Mint leave, optional
Step1:
Keep the chopped sliced onions and other vegetables on the side and wash the properly. Wash the basmati rice on the side and soak it for 20 minutes.
Step2:
Take a pot and add oil in the pot. Add the cumin seeds along with green chilies with potatoes, onions and carrots. Mix the vegetables properly and leave them to soft. Once they are soft, add tomatoes and peas along with spices as mentioned in the ingredients. Once the thick gray is ready, add 3 cups of water for 1 cup of rice. Once the water starts boiling, put the soaked rice and mix well.
Step3:
Once the water starts evaporating; close the pot with a lid and slower the flame. Cook the rice on the low flame for 10 minutes. Open the pan when you wish to serve the Pulao. Garnish the same with fresh coriander leaves.
Vegetable rice is served with Raita or curd on the side. You can serve some snacks like pakodas along with some papad and sweets as well for a full course meal. This recipe is quite easy and faster. It takes around 30 minutes to prepare this recipe. So if you like to switch to delicious vegetarian recipe, this is a great choice.
